New Year Bread Pudding Recipe

Hello and Happy 2017! We are happily chilling in a beautiful vacation home on a channel in Sugarloaf Key in the Florida Keys, just about 17 miles before you hit Key West. The weather is absolutely amazing, and I am excited to share lots of fun recipes and Floridian fun for the next little bit. 

I have a super tasty recipe for you today, that can be made with a few simple ingredients, most of which you may already have!

If you love French Toast, you will definitely LOVE this recipe. It makes the house smell absolutely amazing when it's baking. This was also the first time I have created this dish in a circular pie dish, and I loved how cute the presentation was. Simply cut triangular pie-shaped slices, and serve on a pretty plate.

Happy 2017 From The Florida Keys!

Happy 2017 from our little slice of Heaven! This is the view out of the back of our house.

ingredients

1 Loaf or sweet bread or French Bread. Day old bread is recommended

3-4 eggs

1 pint of Heavy Whipping Cream

1/4 -1/3 C. Milk (any type will do)

1/4 - 1/2 C. Sugar

Dash of cinnamon

Optionally top with goat cheese - I found one that had candied cranberries and oranges in it

Round Baking Dish or 9"x13" baking dish (glass or metal)

Non-Stick spray or butter to coat dish

Large mixing bowl and stirring spoon

instructions

1.) Using a serrated knife, cut loaf or bread into bite sized cubes. No need to worry about making pieces uniform, any way you like will do.

2.) Prep baking dish by spraying with non-stick spray or coat lightly with butter and a paper towel.

3.) In a large, separate mixing bowl, combine all ingredients except for bread, and mix thoroughly.

4.) Add in bread, mix again, and make sure all bread is coated. Optionally top with crumbled goat cheese.

5.) Cover dish with foil, and refrigerate for about 40 minutes - 1 hour. At minute 40, preheat oven to 400 degrees F.

5.) Bake dish for 30 minutes (covered with foil), then carefully remove foil from dish with tongs or similar, and bake for another 20-30 minutes. Be very careful the last few minutes, that it does not burn. 

6.) Let cool a little bit, and slice triangular slices and serve on adorable pie plates. 

One variation would be to heat butter, brown sugar, and walnuts in a skillet and pour over top. Enjoy!
