Butternut Squash "Noodles" - Lily The Wandering Gypsy

Squash “Pasta” is my favorite weeknight meal now.

Spiralize 1 medium-sized butternut squash, place on a baking sheet and cover in oil and seasonings and bake at 350 degrees F for 7-9 minutes, or until tender.

To prepare my chicken, I kept the chicken breasts whole, seasoned them on both sides, then cooked them in a skillet on the stovetop. I love starting my dishes with chopped onion and garlic, and a little bit of olive oil! YUM!

Add spiralized squash “pasta” to a plate with steamed and seasoned kale, and top with cooked chicken breasts. Enjoy :)
