Tasty Game Day Recipe - Spinach Dip Stuffed Bread Boat

So excited to share this recipe with you! I've been thinking about making this for a while now, and it turned out great. Perfect for a Game Day / Super Bowl / Tailgating Party, too! Football viewing parties are such a fun way to get friends and family together, and this recipe is a crowd pleaser. It only takes a few ingredients, so keep reading to see how I made this tasty dish. 

INGREDIENTS:

3-4 handfulls of fresh spinach, stems removed, and chopped in small pieces

2 -3 C. Shredded Cheddar

8-10 oz. Cream Cheese

Salt and Seasonings

Red Onion

Other Optional Add-Ins: Garlic, Bacon Bits, and/or Red Pepper

Tip: Set the mood of your football party with some adorable paper napkins and paper cups.

To make the GO TEAM GO bunting, below, I simply cut out rectangles from brown kraft card stock, then snipped them to make a V at bottom. I also added letter stickers and cut slits with a sharp craft knife to allow the ribbon to fit through. Such a cute decor item!

INSTRUCTIONS:

1.) Preheat oven to 350 degrees F. Using a serrated knife, carefully make slits up the 4 sides of the middle, just to get your placement correct. Once happy, cut deeper into the bread, but make sure you don't cut through to the bottom. Scoop extra bread out with fork and knife.

2.) Chop onion, and sauté with an itty bitty amount of olive oil. Once the onions have softened, add your hand fulls of chopped, prepared spinach - whatever fits into the skillet. Sautee again until spinach is soft. Feel free to add a few drops of water to help the spinach steam. 

3.) Strain any water remaining. Then, add the rest of the ingredients and melt and stir until combined.

4.) Add mixture to bread boat, and bake for 20 minutes uncovered, then covered in foil for another 15-20 minutes. If you have a much newer oven than I do, reduce time by about 10 minutes, and make sure the middle of the mixture is warm before cutting into slices and serving.
