ORGANIC VEGETARIAN CAST IRON SKILLET NACHOS RECIPE (Serves 4)

I was inspired to create this recipe because of the organic ingredients in the beer, plus my love for always eating organic every chance possible. I always aim to use as many organic, vegetarian ingredients in my recipes! Thiese skillet nachos could be made vegan by simply excluding or subbing out the cheese and sour cream - everything else is vegan!

Ingredients (Use organic when possible):

1 bag of blue corn tortilla chips or any chips you like

1 small can green chilis

1 cup diced, roasted sweet potatoes

1 cup finely chopped red and yellow peppers

thinly sliced jalapeños

2 cups shredded cheddar cheese

1/2 - 1 cup sour cream (transfer into plastic squeeze bottle for easy use and application)

1/2 - 1 cup lettuce (not shown)

1/2 cup black olives (not shown)

Cast Iron Skillet - at least 12” across

Instructions (See video below for more details):

1.) Spray skillet with non-stick spray. Place a layer of tortilla chips to cover the bottom of the skillet.

2.) Add your prepared toppings such as: diced chilis, shallots, onions, roasted sweet potato, seasonings, peppers, black beans and anything else that can be baked in the oven. Also, top with jalapeños and 1-2 cups of shredded cheddar cheese.

3.) Bake nachos at 400 degrees for 10-12 minutes, or until cheese has melted. ***BE CAREFUL when removing the cast iron skillet from the oven because the handle is deceptively BOILING HOT. Please always use an oven mitt when handling the nachos and the skillet.

4.) Top with sour cream, cilantro, tomatoes, and any other ingredients you like. Enjoy with Michelob ULTRA Pure Gold Organic Light Lager this Super Bowl.

These skillet nachos are also fun because they are more of an interactive dish, where people can mingle around the meal and grab small bites as they wish. Keep beer on ice or in the fridge for easy pairing!

I found a unique way to incorporate three varieties of Amy’s Kitchen soups into a Vegetarian Pot Pie, and I hope you love it! Since Amy’s Soups already taste delicious on their own, I was able to allow those flavors to shine, while simply complimenting them with a few more veggies and a flaky, puff pastry woven lattice crust. This dish can be made as individual pot pies, or as one large casserole – it’s completely up to you! And, feel free to use this lattice technique, or simply use a full sheet of puff pastry crust right across the top.

This homemade, vegetarian dish is waiting to be served at your next weeknight dinner, holiday meal, or even as a make-ahead meal that can be frozen and baked in just a short time, making dinner exceptionally easy AND delicious!

The phrase “comfort food” definitely comes to mind with this dish. It’s filled with an array of veggies, plus Amy’s Organic Cream of Mushroom Soup, Organic Chunky Vegetable Soup, and their Organic Vegetable Barley Soup. This dish is literally brimming with vegetables, you are going to love it. Even super picky eaters will enjoy this food. It’s a great idea to stock up for the cooler months with Amy’s soups! Keep a few soup cans stashed in your pantry (or desk!) for those times when you want something tasty that will warm you up as well. I always feel better after a warm meal, and these soups make an exceptional meal all on their own!

I love this cream of mushroom soup - it could surely be enjoyed on its own, warmed up with a handful of oyster crackers in the bowl for some crunch. I have never found a cream of anything soup that I am happy with. I have found that most canned cream soups are all way too thick and just full of unnecessary ingredients, and I have found too some have a sort of strange aroma. This has always turned me away from using condensed cream soups, but now I have a newfound hope thanks to Amy’s Kitchen! The Cream of Mushroom Semi-Condensed Soup worked super well for the base of this recipe, and would even be super delicious heated and enjoyed on its own, or with a handful of soup crackers.

I have fond memories of my mom making chicken pot pie many, many times as a child. She would use a traditional recipe that incorporated chicken and a small portion of veggies. It was always amazing, but as I grew older, and realized the importance of eating plant-based, I knew I needed to adapt a few of my most treasured family recipes into vegetarian versions.

Luckily, all of Amy’s products contain high-quality ingredients. That is extremely important for me, and I am so happy I have made a small lifestyle switch to considering each and every ingredient in the foods I eat and prepare for those I love. At Amy’s, they choose the best ingredients for each recipe. They cook with ingredients that people use in their own kitchens and trust, like carrots, beans, flour and spices! They don’t use a lot of starches and thickeners (which I do notice when I open their soups and other foods. They rely instead on slow simmering and cooking to develop soups and creamy sauces. This is very apparent as I was using the Amy’s Cream of Mushroom soup, it’s a really smooth texture without being overly thick, like other cream canned soups.

Veg Pot Pie Recipe

INGREDIENTS:

1 can Amy’s Organic Cream of Mushroom Soup

1 can Amy’s Organic Chunky Vegetable Soup

1 can Amy’s Organic Vegetable Barley Soup (any of their other vegetable soups will work well too)

1 sheet of puff pastry

½ red onion - chopped

1-2 cloves garlic – minced

1-2 TBSP olive oil

½ of a red potato – chopped into very small pieces

1 c. broccoli – chopped into small pieces

½ c. corn (frozen or canned)

½ c. frozen peas

2-4 TBSP seasoning (I use a mixture of low sodium seasoned salt and a Greek spice blend)

1 TBSP butter or butter alternative

3 TBSP flour

salt

Optional 1 egg for egg wash (simply use which to stir up one egg in a small bowl)

INSTRUCTIONS:

1.)   Sautee olive oil, onions, and garlic, and 1-2 TBSP seasoning for 2-3 minutes. Once onions are soft, add potatoes and cook at medium heat for about 3 minutes with the pan’s lid on. Carefully stir the potatoes once during cooking, and replace lid.

2.)   Add 1 cup broccoli, corn, and frozen peas, and simmer another 3 minutes. Add up to 2 tsp more seasoning at this point, and stir to coat all veggies.

3.)   Turn off heat, and transfer all veggies from skillet to another heat safe bowl and set aside. Do not clean or wipe out skillet yet.

4.)   In this same skillet, melt 1 TBSP butter. Once melted, stir in 3 TBSP flour, and stir until combined. This helps to thicken the sauce. It will look “chunky”, but that’s ok!

5.)   Add 1 can of Amy’s Organic Cream of Mushroom soup, and stir to combine. Turn heat back onto medium, and add the bowl of veggies back into the skillet. Stir to combine, and heat for 2-3 minutes while stirring, to combine and thicken everything.

6.)   Preheat oven to 400 degrees for Transfer into prepared baking dish(es) – make sure to spray them with non-stick spray first!

7.)   Time to do the crust! Either place one sheet of puff pastry across the top of the baking dish and trim the sides and cut vents at top, OR use the lattice technique I have shown in this post!

8.)   To lattice: cut ½” or 1” strips out of your puff pastry sheet and weave them across the top of the pie. I start by placing three strips vertically, then working on weaving in the three horizontal strips. From there, I can then place the remaining strips of puff pastry into the top of the pie. Cut excess dough hanging over sides of baking dish, and if you want, use your fingers to gently press the dough strips down onto the baking dish so it does not move while baking.

9.)   Brush top of pie with an optional egg wash, and bake small pies for 17-22 minutes or one pie for 25-35 minutes. The puff pastry need to be pretty crunchy on top to ensure that the dough touching the filling is not doughy.

Vibrant Tropical Fruit Plate

We were extremely fortunate to spend time on Sugarloaf Key in January and February, and in addition to the amazing weather, ocean views, and palm trees everywhere, there are some of the most vibrant and delicious fruits available. Since we got to spend quite a while in the Keys, we got to know some of the neighbors in the neighborhood where our rental house was located, and we were so concerned for everyone during and after the hurricanes. We have touched base with at least one family and they said that no one in the area suffered too much damage, and we were lucky enough to find out that most importantly, everyone was ok. 

I was looking back at a few of our photos from earlier this year, and I even though I have of course been in Fall-Pumpkin-Everything Season lately, I still wanted to share this light and bright Tropical fruit plate with you because I am feeling nostalgic about Florida.

Organic fruits and veggies at the grocery stores are sky high, but I wanted to embrace the tropical spirit of everything around me, and was super happy to find two awesome fruit stands. 

Keys Homegrown, the fruit stand that was much closer to our rental was located next to Keys Cuisine, unfortunately closed while we were there. I found star fruits, 4 for $1.00 there, plus TONS of amazing other fresh fruits. So sad that place closed!

Next, was Paradise Produce, a much larger and super well organized fruit stand which is luckily still there. They had friendly staff who explained a bit about some of the more exotic and unusual fruits, and their selection was incredible! (The photo below is one I grabbed from their Facebook Page).

Keys Cuisine was definitely one of the best three restaurants out of the Key West area. The other two included the OMG-inducing Bavarian Bakery and Sandwich Shop called Sugarloaf Food Co. The other restaurant was called Bucktooth Rooster and served huge portions of delicious comfort food.

For this fruit plate, I knew I needed a rather large container, and luckily, I found one at the Dollar Tree that held everything extremely well. The plate is made of white plastic, and had a smaller round center part that you would usually use for dip or salsa. I placed the small watermelon bowl into the center and then built my fruit plate around that!

instructions

1.) Cut watermelon in half, carefully making sure the cut is smooth. This will become part of your fruit plate display.

2.) Choose the more attractive half of the watermelon and set aside. Cut the other half into cubes, removing the outer skin as you go. With the prettier half of the watermelon, slice around the top with a sharp knife to remove as much of the red part as possible. Then, cut that into cubes. Place hollowed out watermelon half into the center of the tray, and refill it half way full with watermelon cubes. 

3.) Cut kiwi into flower shapes, by very carefully using a pairing knife to press into the kiwi in a zig zag shape all around the entire circumference of the fruit. This is an amazing way to add visual interest to your platter! Be careful to never cut toward your hand.

4.) Lastly, cut apples and any other fruits, and begin to arrange clusters of grapes, papayas, and any other ingredients in your own style and way. This would be amazing also served with fruit dip, but this is an amazing way to encourage guests or your family to eat healthier snacks.

We are so fortunate to have such a vibrant Farmer's Market for still being in s pretty small city. I shot these photos in late May. It's interesting how some produce is only available a week or two, and I am sure even a few weeks later, the market looks completely different. It's definitely my goal to visit the market as many times as possible this year, especially before those mornings are a balmy 95 degrees with a very high % of humidity. 

Also, this year, our weather has just been kind of odd, so I believe that growing seasons for early growing produce was severely shortened and stunted. But, now, the weather has gotten a lot warmer, it's not raining excessively, and the sun is definitely shining and feeding all of those plants!

Two Amazing Fruity Frozen Yogurt Recipes {Peach Pineapple + Raspberry Peach}

Peach + Raspberry Frozen Yogurt

Yum! That;s basically the first word that comes to mind when I look back at these photos. I have been wanting to make some frozen yogurt for some time now, and I had the perfect ingredient for it! Peaches that Bobby's mom gave us when we visited recently. They were just perfectly sweet and juicy. 

I just love how natural the ingredients in this recipe are. This is a way better option than something you can buy in-store, and takes hardly any time at all! The peaches can be cut up and pureed ahead of time, making this even easier. The end result tastes amazing, and will surely please that sweet tooth for people of all ages!


It all starts with peaches...

Cut the peaches in half, then whatever half still has the pit, slide that in half again. The pit will come right out! Make sure your peaches are a teeny tiny bit soft and ready to use, rather than super firm. You can also put the peaches into a grocery bag for a few hours to  soften them up.

Here are the Basic Ingredients (sans the pineapple - that is shown in the ingredients photo, within the peach puree). Each recipe can be found below its respective title, further down in this post.

INGREDIENTS:

- 3-4 Peaches, peeled and sliced, pits removed

- 2 C. vanilla yogurt (I used the sweetened kind)

- 2-3 Tbsp sweetener like agave

- 1 C. (or more) fresh raspberries (I froze my own before using them in this recipe)

- 1/2 Can Pineapple rings + their juice

INSTRUCTIONS:

- Puree all ingredients until very smooth, then pour into a freezer-safe container with a lid. Freeze for at least a few hours (but overnight is recommended). Scoop the frozen yogurt into a big bowl and enjoy!! This recipe is amazing for summer. The color of this frozen yogurt is absolutely stunning - that pink color is lovely!

- 2-3 Tbsp sweetener like agave

- 1/2 Can Pineapple rings + their juice

Scoop the frozen yogurt into a big bowl and enjoy!! This recipe is amazing for summer. This recipe is the same as the one above, minus the raspberries!

Smoothie Time With Annie's Homegrown Organics

I have been on a major smoothie kick lately, and after making one almost every day, I have found my perfect blend of ingredients to make a smoothie that I haven't gotten tired of yet! I will alter the recipe just a little bit, depending upon what fruit I have in my fridge or freezer, but I basically use the same formula each time. 

I have always been drawn to Annie's Homegrown Organic products, so when I saw this yogurt at our local Schnuck's, I grabbed a couple of containers, lots of berries, and also re-upped on unsweetened almond milk. 

I have also learned that to make a smoothie the best (most drinkable) consistency possible, you can't use all frozen fruits. Otherwise, it freezes all of the other ingredients, making something more like soft sorbet (which is great for smoothie bowls or making nice-cream). Also, adding the almond milk definitely helps to thin out your smoothie, but the taste can be overwhelming, so just test your smoothie before pouring it in the jar. Lastly, with the yogurt, I add a good amount, because it tastes SO good! So, the amount of each ingredient just depends on your taste preferences.

- Annies Homegrown Organic Very Vanilla Yogurt

- Unsweetened Almond Milk

- Frozen Raspberries (I freeze fresh ones in jars)

- Frozen Blackberries (I also froze some fresh ones in jars)

- Fresh Strawberries (tops sliced off, cut into smaller pieces)

- Fresh Blueberries 

- Fresh Banana

- Ice

- Sugar is your fruit isn't very sweet or too tart

1.) In a blender or food processor, add sliced strawberries, fresh blueberries, frozen raspberries, frozen blackberries, a dash of almond milk, banana, 1/3 container of yogurt, and a handful of ice.

2.) Hold the blender down, and begin to blend and puree your ingredients! Keep blending for a bit, because you want everything the same consistency. Note - unless you have a super-awesome blender, the ice will sound rough at first when you blend...

3.) Pour into a big jar, and enjoy! This smoothie keeps me full well past lunch time, it's amazing!

A Special Treat For Your Furry Friends! Organic Pumpkin Oatmeal Dog Treats Recipe

These treats were a real hit with my little Chocolate Lab, Cabbie. We always try to make sure we only give our dog the very best. Whether it be food, we give her Solid Gold Barking At The Moon, or what treats she gets, it is always the best we can possibly get. I was checking out different dog treat recipes, and came across this one. I love how it has only all-natural ingredients and does not contain chicken broth, salt, or sugar - these were much more mild for her tummy.

Pumpkin Oatmeal Dog Treats Recipe

INGREDIENTS:

  • 3 cups oats
  • ½ cup peanut butter
  • 1 cup pumpkin puree
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 2 eggs

INSTRUCTIONS:

  • Place the oatmeal into a food processor and pulse it until it's not so coarse, but it doesn't need to be a fine as flour.
  • Add oatmeal, pumpkin, peanut butter cinnamon baking powder and eggs to bowl on mixer and blend on medium until it's all mixed.
  • Roll out with a little flour and cut with cookie cutters.
  • Bake at 375 degrees for 15-20 minutes.
  • Cool on rack until completely cooled.
  • Place in airtight container to keep them fresh, or in the freezer. I keep them in the freezer, they don't freeze solid as there is little liquid. This is important!!!
